Black Sticky Rice Pudding

Description

I still remember when I was a young boy using buffaloes to plough the rice fields with my father and I noticed that the leaves on the rice were black. This was my first introduction to black rice as everything about this rice is black. Many people think that colour is added to the rice but infact it is naturally black. This pudding will be appreciated by anybody who likes rice pudding.

Ingredients

130gblack sticky rice (white sticky rice can also be used)
750mlwater
250mlthick coconut milk (reserve 60mls ( ¼ cup, 4 tablespoons) for garnish)
70gsugar

Instructions

Put the black sticky rice into a pan along with the water and bring to the boil. Simmer for 30 minutes until the rice is cooked, stirring occasionally.

Once the rice is cooked, add the coconut milk and sugar and simmer for 3-5 minutes.

Serve with the remaining thick coconut milk spooned on top. It can be eaten either hot or cold.
