Ingredients

250gbeef (medium rare roasted or grilled, thinly sliced)
3Tfish sauce
3Tlime juice
25 green and red bird's eye chillies (finely chopped)
1⁄2tpalm sugar
1⁄2tsugar
5 shallots (thinly sliced)
3⁄4ccucumber (cut in ½ lengthways and thinly sliced)
1 tomato (cut in ½ remove the seeds and thinly slice lengthways)
1⁄2cchinese celery (roughly chopped)
2 spring onions (thinly sliced)
  a small handful of coriander leaves

Instructions

Put the fish sauce, limejuice, chillies, palm sugar and sugar into a bowl and mix together. Add the beef and stir well so that the beef is well covered in the sauce.

Add the shallots and mix together. Then add the cucumber and the tomato and mix again. Finally add the Chinese celery, spring onions and coriander leaves.

Mix together and serve immediately.
