This is a really simple cake to make and in Thailand it is sometimes steamed in little banana leaf boats or in little bowls. If you cannot obtain grated coconut then you can use unsweetend dessicated coconut but it needs to be soaked in water for about 10 minutes before using.

Put the bananas into a bowl along with the rice flour, tapioca flour, sugar, salt, coconut milk and 3/4 of the grated coconut. Mix well until all the ingredients are thoroughly combined. Put the mixture into a steaming or baking tin (8”x 8” or 20cm x 20cm) and sprinkle the rest of the grated coconut on the top.
Steam for 30 minutes or bake in the oven (180 C or 360 F) for 30 minutes. Once it is cooked turn the cake out of the tin and serve hot or cold.
